Chitol Macher Muithya Recipe
Chitol Macher Muithya is a traditional Bengali dish made with fish and is quite popular in Bengal. Here's a recipe on how to make it:

500 gm Chitol Fish
2 medium-sized potatoes, boiled and mashed
1 onion, finely chopped
1 tsp ginger paste
1 tsp garlic paste
1 green chili, finely chopped
1/2 tsp red chili powder
1/2 tsp turmeric powder
2 tbsp cornflour
Salt to taste
Mustard oil for frying
( For the gravy )
1 onion, finely chopped
1 tomato, finely chopped
1/2 tsp ginger paste
1/2 tsp garlic paste
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
1 tbsp mustard oil
Coriander leaves for garnishing

Clean and wash the Chitol fish thoroughly. Remove the bones and grind the fish into a smooth paste.
In a mixing bowl, add the ground fish paste, boiled and mashed potatoes, chopped onions, ginger paste, garlic paste, green chili, red chili powder, turmeric powder, cornflour, and salt. Mix well to form a smooth dough.
Make small balls out of the dough and keep them aside.
Heat enough mustard oil in a pan for frying the fish balls. Fry the fish balls in batches till they turn golden brown in color. Drain on a paper towel to remove excess oil and keep aside.
In another pan, heat mustard oil and add chopped onions, ginger paste, and garlic paste. Saute for a few minutes till the onions turn translucent.
Add chopped tomatoes, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook till the tomatoes become mushy and oil starts separating from the gravy.
Add water to the gravy and bring it to a boil.
Gently add the fried fish balls to the gravy and cook for 10-15 minutes on low flame.
Garnish with coriander leaves and serve hot with steamed rice.
