Rui Macher Jhol Recipe
Rui Macher Jhol is a popular Bengali fish curry made with Rohu fish. Here is a recipe to make Rui Macher Jhol

4 pieces of Rohu fish
1 medium-sized potato, peeled and cut into cubes
1 onion, finely chopped
2-3 green chilies, slit
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
Mustard oil for cooking
Water as needed
Coriander leaves for garnishing

Wash the Rohu fish pieces well with water and marinate them with 1/2 teaspoon of turmeric powder and salt for 15 minutes.
Heat mustard oil in a deep-bottomed pan or kadhai over medium heat.
Once the oil is hot, add the marinated fish pieces and fry them on both sides until they turn golden brown. Remove them from the pan and keep them aside.
In the same oil, add the chopped onions and sauté until they turn golden brown.
Add the ginger paste, garlic paste, cumin powder, coriander powder, and remaining turmeric powder. Sauté for a minute.
Add the potato cubes, slit green chilies, and salt to taste. Stir well and cook for 2-3 minutes.
Add enough water to make a thin gravy consistency, and bring it to a boil.
Add the fried fish pieces into the gravy, and simmer for 5-6 minutes until the potatoes are cooked and the fish pieces are well-cooked and infused with the spices.
Turn off the heat, and garnish with chopped coriander leaves.
Serve hot with steamed rice.
