500g fish (any firm white fish like cod or haddock)
2 onions, chopped
2 tomatoes, chopped
1 tablespoon ginger-garlic paste
2 green chillies, chopped
1 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 cup coconut milk
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil

Clean and cut the fish into medium-sized pieces. Apply salt and turmeric powder to the fish pieces and set aside.
Heat oil in a deep-bottomed pan. Add the chopped onions and sauté until they turn golden brown.
Add the ginger-garlic paste and chopped green chillies. Sauté for a minute.
Add the chopped tomatoes and all the powdered spices. Mix well and cook for 5-7 minutes on medium heat until the oil separates.
Add the coconut milk and mix well. Bring the mixture to a boil.
Add the fish pieces and simmer for 10-15 minutes until the fish is cooked through.
Garnish with fresh coriander leaves and serve hot with steamed rice or bread.
